Description

Strongly believing in respecting local grape varieties, Burja Estate winemaker Primož Lavrencic bought a 60-year-old
Malvasia vineyard in the Vipava Valley along the northern Adriatic coast some years ago. This wine is made from the indigenous “zelen” grape which means “green” in Slovenian, named after the emerald tinge in the fresh grape must. The variety is almost extinct and only a handful of known vineyards are left in the whole world. Two days of maceration on the skins adds some texture and complexity while the wine remains pale in colour, the wine is then fermented and matured in concrete tanks. Lavrencic has a very natural approach, in his own words he is “only controlling temperature and oxidation, everything else I’m only monitoring.”
